Projects

Co-founder Eagles Cafe Atitlan

At Eagles Nest Atitlan, I successfully opened and operated a restaurant, transforming it into a thriving culinary destination. This role was pivotal in preparing me for future challenges, as it involved not only running the daily operations of the restaurant but also managing large-scale events. The venue regularly hosted events with up to 400 attendees, requiring meticulous planning and execution. Additionally, I oversaw catering for retreats, which involved cooking three meals a day for up to 100 people, and I orchestrated fine-dining experiences with multiple courses. Building, managing, and running the kitchen at Eagles Nest Atitlan was an intense and demanding job, but one that I approached with immense joy and dedication. The experience trained me to thrive under pressure, adapt to dynamic situations, and deliver exceptional culinary experiences. This journey was both a test of endurance and a source of profound fulfillment, solidifying my passion for the culinary arts and event management.See More

Founder Cafe Nuna

At Café Nuna, I embarked on another exciting venture by opening and managing a vibrant café that quickly became a beloved community hub. This job demanded a blend of creativity, culinary expertise, and strategic management to create a unique dining experience that resonated with our customers. From designing the menu to overseeing day-to-day operations, I was deeply involved in every aspect of the café. Café Nuna was not just a place to dine but a destination for memorable experiences. We hosted various events, from intimate gatherings to larger community functions, each requiring careful planning and attention to detail. My responsibilities included managing staff, ensuring the highest quality of food and service, and fostering a welcoming atmosphere for our guests. Running Café Nuna was a dynamic and fulfilling challenge that allowed me to showcase my skills in both the culinary arts and business management. The success of the café was a testament to my ability to innovate, lead, and create an environment where both staff and customers thrived. This experience further solidified my passion for the restaurant industry and my commitment to delivering exceptional culinary experiences.See More

Green Cuisine Guatemala

Green Cuisine Guatemala was born out of an extraordinary and challenging experience. Living in a small village in Guatemala, my business partner, Chef Dre, and I faced a significant landslide that forced the entire community to evacuate to a nearby school. In this makeshift shelter, we found ourselves cooking for over 700 people with donated food, limited equipment, and the help of volunteers. Despite the chaos and pressure, we managed to provide for everyone, turning a crisis into a testament of our determination and resourcefulness. Inspired by this experience, we realized that if we could handle such a demanding situation, we could certainly run an organized catering business. This is where Green Cuisine Guatemala was established. Our business quickly grew, catering to retreats, weddings, and various events, delivering high-quality culinary experiences tailored to our clients' needs. Running Green Cuisine Guatemala allowed me to harness my skills in event planning, large-scale food preparation, and team management. The foundation of our business was built on the strength and collaboration we demonstrated during that initial crisis, and it fueled our drive to succeed in the catering industry. See More
